Bengali style Chicken curry- simple and flavorful!

 

Another recipe documentation to make my life easier when I want to cook this again! πŸ˜‹

Recipe -

1. Soak chicken in water, 1 tbp salt and vinegar for 30 minutes.

2. Marinate the chicken with onion barista ( these are dried roasted onions), salt, turmeric powder, dhaniya powder, jeera powder, sugar, red chilli powder, Kashmiri chilli powder, black pepper powder, mix of- chicken curry masala , chicken Tikka masala, chicken tandoori masala, mustard oil, yoghurt, lemon and ginger garlic paste.

3. Heat up the kadai and fry whole garam masala-2  green cardamom ( elaichi), cinnamon ( darchini), whole black pepper , bay leaf ( tez patta), jeera ( cumin seeds), dried red chilli ( sukhno lonka) in mustard oil and pinch of ghee. Add grated ginger , 2 whole garlic cloves and finely chopped garlic from one clove, finely chopped onions. 

4. Add boiled potatoes ( can also be premarinated with turmeric, chill power and salt and fried). 

5. Add the chicken. Optional- Add some more onion barista 

6. Fry well and close the kadai lid, and then remove it after 10 mins when the oil floats up to the top with reddish hue. Keep repeating.

7. Add dried kasturi methi leaves and dried coriander leaves.

8. Cook on low flame.

9. Ready to serve with hot nicely cooked basmati rice!
